THE food business attracts a lot of people because many of us think it is something we can embark upon without prior experience. Starting a restaurant is a business venture and it therefore needs a strategic business plan as well as knowledge of the business requirements and environment.
Our program provides would-be restaurateurs with a logical sequence to plan their restaurant from scratch and work out realistic budgets according to market prices. This program equips you with tools to evaluate your own projects. The Managing Your Restaurant workshop covers the critical aspects of running a restaurant such as operating procedures and food production management. You will learn about sales analysis, optimization of revenue, restaurant cost accounting, purchasing and inventory.
ABOUT THE TRAINER:
JEAN MICHEL FRAISSE has opened and operated numerous restaurants and catering businesses in France and Asia in a career spanning 33 years. A graduate of the Masters in Hospitality, Tourism and Spa Management course from the University of Toulouse in France, he has been providing consultancy services to the hospitality, tourism and food businesses in Asia for the past decade. In his home country, he was a chef de cuisine at age 20 and an executive chef when he was merely 23 years old. His company, HTC in Asia and The French Culinary School in Asia are committed to provide the highest quality training for hotels, resorts, restaurants and business entrepreneurs in Asia Pacific to arm their employees or individuals with the right skills.
